Broccoli cheddar soup
I didn't have enough cheddar so I used a handful, about 1/2 cup of grated cheddar, 8oz of Velveeta, and what I had left of colby Monterey jack cheese which was about 1/4 of a cup.
I also used veggie broth instead of chicken broth.

Peanut butter, marshmallow and chocolate chip sandwich
I have a new sandwich maker that I have fallen in LOVE with!
I decided to make a dessert sandwich.
I took a piece of wheat bread, the kind with seeds in it, and put peanut butter on on side and put the plain bread side down on one side of the grill. I did the same to wonderbread on the other side of the grill. Then I put mini marshmellows and chocolate chips on top of the peanut butter. Next, I put a little bit more peanut butter on the another slice of kind of bread and put the peanut butter side down and closed the grill for about 1-2 minutes, just enought to brown the wonderbread, since you can't tell if the wheat bread is really browning.

It tasted so good!

Pesto grilled cheese
I keep finding "grown up" versions of grilled cheese sandwiches. I love grilled cheese, but I LOVE the grown up versions I am finding now and I want to try them all.
I found this pesto grilled cheese sandwich and I had to try it!

I used slices of gruyere cheese and put the pesto between the slices. I also didn't have spinach pesto, so I just used whatever green pesto I had. Lol
OMG it tasted so good! Definitely one I'd recommend.

Spinach Saag
I made Spinach Saag for dinner tonight from this recipe:

I didn't have fresh ginger so I used a few "dashes," as my grandmother would say, of ground ginger powder instead.
I also didn't have coriander so I just left it out.

My take on "Chicken" roll ups

I used veggie "chicken" strips and cooked them in a skillet and then cut them into little pieces with kitchen scissors. The regular cresent rolls weren't enough, so I had to use half of a french loaf dough for the rest. It was amazing though!
